I’m Joe Laker — a chef consultant with over a decade of experience across the UK hospitality scene. From casual bistros to Michelin-starred kitchens like Pollen Street Social, The Black Swan at Oldstead, and Roots York, I’ve led and learned from some of the best in the industry. I was Head Chef at both Anglo in Farringdon and Fenn in Fulham, and I now run my own restaurant, Counter 71.

I help independent restaurants and pubs sharpen their food, teams, and operations — whether that means fixing food cost issues, redesigning a menu, improving staff training, or getting a new concept off the ground.
